Grilled Chicken Chop Salad

A healthy and refreshing salad with grilled chicken breast, mixed greens, and toppings that are influenced by the Mediterranean. Great for a quick and healthy meal!

Ingredients:

  • 2 boneless, skinless chicken breasts

  • 2 tablespoons olive oil

  • Salt and pepper to taste

  • 1 cup cherry tomatoes, halved

  • 1/2 cucumber, sliced

  • 1/4 red onion, thinly sliced

  • 1/4 cup crumbled feta cheese

  • 1/4 cup Kalamata olives, pitted and sliced

  • 1/4 cup balsamic vinaigrette dressing

Instructions:

Preheat the grill to medium-high heat


Season the chicken breasts with olive oil, salt, and pepper


Grill the chicken for 6-7 minutes per side or until cooked through, with grill marks and no pink in the center


Remove the chicken from the grill and let it rest for a few minutes


Then, slice it into thin strips


In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, feta cheese, and Kalamata olives


Add the grilled chicken strips on top of the salad


Drizzle the balsamic vinaigrette dressing over the salad


Toss everything together gently to combine all the ingredients and coat them with the dressing

Ingredients:

  • 1 lb boneless, skinless chicken breasts, diced

  • 1 cup buffalo sauce

  • 1 cup chicken broth

  • 1/2 cup ranch dressing

  • 8 oz cream cheese, softened

  • 2 cups shredded cheddar cheese

  • 1 lb pasta such as penne or rigatoni, uncooked

  • Salt and pepper, to taste

  • Green onions, chopped for garnish

  • Blue cheese crumbles for garnish, optional

Instructions:

Chicken pieces, buffalo sauce, chicken broth, ranch dressing, cream cheese, and shredded cheddar cheese should all be put in a slow cooker


Use a stir to mix


Put the lid on top and set the heat to low


Cook for 4 to 6 hours, or until the chicken is well done and soft


Follow the directions on the package and cook the pasta until it's al dente about 30 minutes before you serve it


Drain well


Put the cooked pasta into the slow cooker and stir it in with the chicken and sauce


Add pepper and salt to taste


If you want, you can serve it hot with blue cheese crumbles and chopped green onions on top

Autumn Beef Stew

This hearty beef stew from fall is great for cold days. A comforting and filling meal is made by simmering tender beef, hearty vegetables, and fragrant herbs in a rich broth.

Ingredients:

  • 2 lbs beef stew meat, cubed

  • 2 tbsp olive oil

  • 1 onion, chopped

  • 3 cloves garlic, minced

  • 3 carrots, sliced

  • 2 potatoes, cubed

  • 1 cup diced tomatoes

  • 4 cups beef broth

  • 1/2 cup red wine

  • 1 tsp dried thyme

  • 1 tsp dried rosemary

  • Salt and pepper to taste

Instructions:

Put olive oil in a big pot and heat it over medium-low heat


Put in the garlic and onions, and cook them until they get soft


Put in the beef cubes and brown them all over


Add the diced tomatoes, beef broth, red wine, thyme, and rosemary, and mix them in


Add pepper and salt


Bring to a boil, then lower the heat and let it cook slowly for an hour and a half to two hours, or until the beef is soft


Enjoy while hot!

Slow Cooker Fudge

This simple fudge recipe for the slow cooker is great for when you're craving something sweet. You can make rich and creamy chocolate fudge that will please your family and friends with just a few simple ingredients and little work.

Ingredients:

  • 3 cups semi-sweet chocolate chips

  • 1 can 14 ounces sweetened condensed milk

  • 1/4 cup unsalted butter

  • 1 teaspoon vanilla extract

  • 1/4 teaspoon salt

  • 1 cup chopped nuts optional

Instructions:

To make it easy to take out, grease or line the inside of your slow cooker


Shortening, butter, and chocolate chips should all be put into the slow cooker


Put the lid on top and cook on low heat for 90 minutes, stirring every now and then, until the chocolate and butter melt and the mixture is smooth


Add the vanilla extract and salt and mix them in well


You can add the chopped nuts if you want to


Place the fudge mixture in a square 8x8 inch 20x20 cm baking dish lined with parchment paper or another container of the same size


Use a spatula to make the top of the fudge smooth


Set the fudge aside for a few hours or until it's cool enough to touch


Cut the fudge into squares or any other shape you want after it has set


Serve your tasty slow cooker fudge and enjoy it!
